Blueberry Breakfast Crepes

    • 2 large eggs

    • 1 ¼ cups whole milk

    • 1 tablespoon sugar

    Directions

    1. Make the batter: In a blender, combine flour, eggs, milk, butter, sugar, vanilla, and salt. Blend until smooth. Chill for 30 minutes if time allows.

    2. Cook the crepes: Heat a lightly buttered non-stick skillet over medium heat. Pour about ¼ cup of batter, swirling to coat the pan. Cook until golden, flip, and cook the other side. Repeat with remaining batter.
