Sweet corn meets smoky, spicy flavor in this Texan twist on classic street corn. Brushed with Texan Heartland’s Smoky Mesquite Chipotle Sauce and finished with creamy topping, cheese, and fresh herbs, it’s a bold, irresistible side that steals the show at any barbecue or family dinner.
Ingredients
-
4 ears fresh corn, husked
-
½ cup Texan Heartland Smoky Mesquite Chipotle Sauce
-
½ cup mayonnaise (or sour cream, or a mix of both)
-
½ cup crumbled cotija cheese (or feta if unavailable)
-
2 tablespoons fresh cilantro, chopped
-
1 lime, cut into wedges
Directions
Grill the corn: Preheat grill to medium-high. Place corn directly on the grates, turning occasionally, until lightly charred (10–12 minutes).
Brush with sauce: Using a brush, coat each ear with Smoky Mesquite Chipotle Sauce while still hot.
Add toppings: Spread a thin layer of mayo (or sour cream) over the corn. Sprinkle generously with cotija cheese and cilantro.
Finish and serve: Squeeze fresh lime juice over the top and serve immediately.
Recipe Note
For a party platter, cut cooked corn into smaller segments before adding toppings — perfect finger food for gatherings.
