The deep blueberry flavor, accented with Cognac and Grand Marnier, pairs beautifully with butter and maple syrup, turning a weekend favorite into a show-stopping brunch dish.
Ingredients
For the Pancakes
-
2 cups all-purpose flour
-
2 tablespoons sugar
-
2 teaspoons baking powder
-
½ teaspoon baking soda
-
½ teaspoon salt
-
2 cups buttermilk
-
2 large eggs
-
¼ cup melted butter
-
1 teaspoon vanilla extract
For Serving
-
½ cup Texan Heartland Blueberry Royale Jam (optionally warmed slightly)
-
Fresh blueberries
-
Maple syrup (optional)
-
Butter pats
Directions
Mix the dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Whisk the wet ingredients: In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla. Pour wet ingredients into dry and stir until just combined (do not overmix).
Cook the pancakes: Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter. Pour ¼ cup of batter per pancake. Cook until bubbles form, flip, and cook until golden brown.
Layer with Blueberry Royale Jam: Stack pancakes on a serving plate, topping each layer with a spoonful of Texan Heartland Blueberry Royale Jam.
Finish and serve: Add more jam, fresh blueberries, and a drizzle of maple syrup if desired. Top with butter pats for a classic touch.
Recipe Note
For a bakery-style flair, fold a few fresh blueberries directly into the batter — it creates bursts of flavor that pair beautifully with the jam drizzle.
