Heavenly Blueberry Pancakes

Ingredients

For the Pancakes

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract

For Serving

  • ½ cup Texan Heartland Blueberry Royale Jam (optionally warmed slightly)
  • Fresh blueberries
  • Maple syrup (optional)
  • Butter pats

Directions

  1. Mix the dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. Whisk the wet ingredients: In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla. Pour wet ingredients into dry and stir until just combined (do not overmix).
  3. Cook the pancakes: Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter. Pour ¼ cup of batter per pancake. Cook until bubbles form, flip, and cook until golden brown.
  4. Layer with Blueberry Royale Jam: Stack pancakes on a serving plate, topping each layer with a spoonful of Texan Heartland Blueberry Royale Jam.
  5. Finish and serve: Add more jam, fresh blueberries, and a drizzle of maple syrup if desired. Top with butter pats for a classic touch.
