Bright, tangy, and packed with flavor, these chicken skewers make weeknight dinners or weekend cookouts a breeze. With Texan Heartland’s Lemon Garlic & Mustard Marinade & Sauce as the marinade, you’ll have bold, fresh taste without the fuss.
Ingredients
-
1 ½ pounds boneless, skinless chicken breasts (about 3 large), cut into 1-inch cubes
-
½ cup Texan Heartland Lemon Garlic & Mustard Marinade & Sauce
-
1 red bell pepper, cut into 1-inch pieces
-
1 yellow bell pepper, cut into 1-inch pieces
-
1 medium red onion, cut into 1-inch wedges
-
Wooden or metal skewers (if wooden, soak in water for 20 minutes before using)
Directions
Marinate the chicken: Place chicken cubes in a bowl or zip-top bag. Pour in ½ cup of Texan Heartland Lemon Garlic & Mustard Marinade & Sauce, making sure all pieces are coated. Cover and refrigerate for at least 30 minutes (up to 2 hours).
Assemble the skewers: Thread chicken, bell peppers, and onion pieces onto skewers, alternating for color and flavor.
Grill or bake: Grill method: Preheat grill to medium-high. Cook skewers 12–15 minutes, turning occasionally, until chicken reaches 165°F internal temperature. (Oven method: Preheat oven to 425°F. Line a baking sheet with foil or parchment, place skewers on the sheet, and bake 15–18 minutes, turning once halfway through.)
Serve and enjoy: Arrange skewers on a platter and drizzle with a little extra Lemon Garlic & Mustard Sauce before serving. Pair with rice, roasted potatoes, or a crisp side salad.
Recipe Note
These skewers pair beautifully with grilled zucchini or roasted potatoes for a complete meal. For an easy appetizer twist, make “mini skewers” using toothpicks and serve with extra sauce for dipping.
