Ingredients

1 ½ pounds large shrimp, peeled and deveined (tails on or off, your choice)

¾ cup Lemon Garlic & Mustard Marinade & Sauce (plus more for drizzling if desired)

2 tablespoons olive oil

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 small red onion, thinly sliced

2 cups snow peas (or snap peas)

2 cups cooked white or brown rice (for serving)

Fresh cilantro or parsley, chopped (for garnish, optional)
Directions
Prep the shrimp and veggies: Pat shrimp dry with paper towels. Slice peppers and onion.
Cook the vegetables: Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add peppers, onion, and snow peas. Stir-fry for 3–4 minutes until tender-crisp. Remove vegetables from pan and set aside.
Cook the shrimp: Add remaining tablespoon of olive oil to the skillet. Toss in shrimp and cook 2–3 minutes per side until pink and just cooked through.
Add sauce and combine: Return vegetables to the skillet, pour in ¾ cup of Texan Heartland Lemon Garlic & Mustard Marinade & Sauce, and toss to coat evenly. Cook for 1–2 minutes until everything is heated through.
Serve and enjoy: Spoon stir-fry over warm rice, garnish with cilantro or parsley if desired, and serve immediately.
Recipe Note
This dish is also delicious with noodles instead of rice. For extra zing, drizzle a
spoonful of sauce over each serving right before eating.
