1 bone-in turkey breast, 5-6 pounds

2 tablespoons olive oil

2 tablespoons unsalted butter, softened

2 tablespoons Texan Heartland Pork & Poultry Seasoning

1 teaspoon Dijon mustard, optional

1 small yellow onion, quartered

2 celery stalks, roughly chopped

1 cup chicken broth or turkey broth

Fresh herbs, optional for garnish
Directions
Preheat the oven: Heat oven to 350°F and place a rack inside a roasting pan.
Prepare the turkey: Pat turkey breast dry with paper towels to help the seasoning form a better crust.
Make the seasoning rub: Mix olive oil, softened butter, Texan Heartland Pork & Poultry Seasoning, and Dijon mustard if using.
Season the turkey: Rub the seasoning mixture over the skin and gently under the skin where possible.
Set up the roasting pan: Place onion, celery, and broth in the bottom of the pan, then set the turkey breast on the rack.
Roast until done: Roast for 1 hour 15 minutes-1 hour 30 minutes, or until the thickest part of the breast reaches 165°F.
Rest before carving: Let turkey rest for 15-20 minutes before slicing to keep the meat juicy.
Serve warm: Garnish with fresh herbs if desired and spoon pan juices over the sliced turkey.
