Ingredients
-
1 jar Texan Heartland Peach Amaretto Pecan Jam
-
4 cups ripe peaches, peeled and sliced
-
1/2 cup granulated sugar
-
1 tsp cinnamon
-
1 tbsp lemon juice
-
1 cup all-purpose flour
-
1 cup granulated sugar
-
1 1/2 tsp baking powder
-
1/2 tsp salt
-
1 cup milk
-
1/2 cup unsalted butter, melted
-
Vanilla ice cream, for serving
Directions
Preheat oven: Set to 350°F (175°C). Place butter in a 9x13 baking dish and melt in the oven.
Prepare peach filling: In a large bowl, combine peaches, Texan Heartland Peach Amaretto Pecan Jam, sugar, cinnamon, and lemon juice. Stir gently until coated.
Make the batter: In a separate bowl, whisk flour, sugar, baking powder, and salt. Add milk and stir until just combined.
Assemble: Pour the batter into the buttered baking dish (do not stir). Spoon the peach-jam mixture evenly over the batter. The batter will rise up around the fruit as it bakes.
Bake: Bake 40 minutes, or until golden brown and bubbly.
Serve à la mode: Spoon warm cobbler into bowls and top with a generous scoop of vanilla ice cream.
Recipe Note
For an extra crunch, sprinkle chopped pecans on top of the cobbler before baking — it ties in beautifully with the nutty notes of our jam.
