Smoky, juicy, and packed with mesquite heat — these BBQ chicken thighs are a Texan Heartland favorite. Our Smoky Mesquite Chipotle Sauce doubles as both marinade and finishing glaze, giving every bite that perfect balance of earthy smoke and chipotle spice. Simple to prep, big on flavor — this is backyard barbecue done right.
Ingredients
-
8 bone-in, skin-on chicken thighs (about 2 ½ pounds)
-
1 cup Texan Heartland Smoky Mesquite Chipotle Sauce (divided: ½ cup for marinating, ½ cup for basting and finishing)
-
1 teaspoon salt
-
½ teaspoon black pepper
-
Lime wedges, for serving
Directions
Marinate the chicken: Pat chicken thighs dry. Place in a large bowl or zip-top bag and coat with ½ cup of Smoky Mesquite Chipotle Sauce, salt, and pepper. Cover and refrigerate for at least 30 minutes (up to 2 hours).
Cook the chicken: Grill method: Preheat grill to medium-high heat. Place chicken skin-side down, grill 6–8 minutes, then flip. Continue grilling 15–20 minutes, basting occasionally with reserved sauce, until chicken reaches 175°F internal temperature. Oven method: Preheat oven to 400°F. Arrange chicken on a foil-lined baking sheet, skin-side up. Bake 25–30 minutes, brushing with reserved sauce halfway through, until chicken reaches 175°F internal temperature.
Finish and serve: Transfer chicken to a platter, brush with extra Smoky Mesquite Chipotle Sauce, and serve hot with lime wedges.
Recipe Note
Try swapping avocado for grilled onions, or serve slider-sized versions at your next gathering.
