3 cups cooked jasmine rice (day-old rice works best)

1 cup diced fresh mango

1 cup mixed vegetables (carrots, peas, and bell peppers)

2 large eggs, lightly beaten

2 tablespoons vegetable oil

3 green onions, sliced

2 cloves garlic, minced

3 tablespoons soy sauce

Directions
Begin heating: Heat 1 tablespoon vegetable oil in a large wok or skillet over medium-high heat. Scramble the eggs until cooked, then remove and set aside.
Sauté veggies: Add the remaining tablespoon of oil to the pan. Sauté garlic, green onions, and mixed vegetables until tender, about 3–4 minutes.
Add rice: Add the rice to the pan, breaking up clumps with a spatula. Stir-fry until heated through.
