Ingredients

4 small flour or corn tortillas, warmed

4 large eggs

1 cup diced potatoes (small cubes)

2 tablespoons olive oil (divided)

½ cup shredded cheddar or Monterey Jack cheese

½ small onion, diced

½ teaspoon salt

¼ teaspoon black pepper

Fresh cilantro and lime wedges, for garnish

2–3 tablespoons Texan Heartland Serrano Sunfire Hot Sauce
Directions
Cook the potatoes: Heat 1 tablespoon olive oil in a skillet over medium heat. Add diced potatoes, season with salt and pepper, and cook until golden and crispy, about 8–10 minutes. Remove and set aside.
Scramble the eggs: In the same skillet, add the remaining oil and sauté the onion until softened, about 2 minutes. Whisk eggs in a bowl, then pour into the skillet and cook, stirring gently until fluffy.
Assemble the tacos: Warm tortillas and layer with potatoes, scrambled eggs, and shredded cheese.
Add the heat: Drizzle generously with Texan Heartland Serrano Sunfire Hot Sauce.
Finish and serve: Garnish with cilantro and serve with lime wedges on the side.
Recipe Note
