Golden, crispy, and loaded with savory Texas flavor, these skillet breakfast potatoes are the kind of side dish that can steal the whole meal. Texan Heartland Master Blend All-Purpose Seasoning brings the perfect balance of salt, pepper, garlic, onion, paprika, mustard, and celery seed, giving every bite a bold, familiar flavor that works beautifully with eggs, bacon, sausage, or breakfast tacos.
Ingredients
-
1½ pounds Yukon Gold or russet potatoes, diced into ½-inch cubes
-
2 tablespoons olive oil
-
1 tablespoon unsalted butter
-
1½ teaspoons Texan Heartland Master Blend All-Purpose Seasoning, plus more to taste
-
½ cup diced yellow onion
-
½ cup diced red or green bell pepper
-
1 tablespoon chopped fresh parsley, optional
Directions
Par-cook the potatoes: Place diced potatoes in a microwave-safe bowl, cover, and microwave for 4-5 minutes until slightly tender but not fully cooked.
Heat the skillet: Warm olive oil in a large cast-iron or nonstick skillet over medium-high heat.
Crisp the potatoes: Add potatoes in a single layer and cook for 10-12 minutes, stirring occasionally, until golden and crisp on the edges.
Add the vegetables: Stir in the onion, bell pepper, and butter, then cook for 5-7 minutes until the vegetables soften and the potatoes are fully tender.
Season to finish: Sprinkle with Texan Heartland Master Blend All-Purpose Seasoning and toss well to coat evenly.
Serve hot: Garnish with parsley if desired and serve with eggs, bacon, sausage, or warm tortillas.
Recipe Note
For crispier potatoes, par-cook them first, then let them steam-dry for a few minutes before they hit the skillet. The drier the surface, the better the browning. Avoid stirring too often—letting the potatoes sit against the hot pan is what builds those golden, crispy edges.
