Ingredients

8 oz rotini or bowtie pasta (about 3 cups cooked)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup corn kernels (fresh, canned, or frozen/thawed)

1 ripe avocado, diced

¼ cup red onion, finely diced

½ cup Texan Heartland Hill Country Verde Hot Sauce

2 tablespoons olive oil

1 tablespoon fresh lime juice

Salt and pepper, to taste

Fresh cilantro or parsley, chopped (for garnish)
Directions
Cook the pasta: Bring a pot of salted water to boil. Cook pasta according to package directions until al dente. Drain, rinse with cold water, and set aside.
Mix the dressing: In a small bowl, whisk together Texan Heartland Hill Country Verde Hot Sauce, olive oil, and lime juice. Season with salt and pepper.
Combine the salad: In a large bowl, toss cooked pasta with tomatoes, cucumber, corn, avocado, and red onion.
